Trust the Testing, Not the Label (Jim Starr on Creatine and Product Safety)

After Donald Hooton framed the stakes, Dr Blaise Collins walked through the clinical research, and Dan Richardson translated it into daily nutrition, Jim Starr (director of client engagement at NSF International) closed the session with the question every parent and athlete eventually has to answer: how do you actually know what's in the product you're about to take?

Starr's path into supplement safety runs through the locker room. A former professional athlete in the NFL and CFL, and a familiar face from seasons of American Gladiators, he's spent more than 30 years in sports nutrition and product development, enough time and enough surgeries (more than 20, following a career-ending injury) to see the industry from both the performance side and the product side. That dual vantage point, he said, is exactly why he now spends his time on the safety side of the equation.

The Test That Changed His Career

Starr opened with a story from 1994. Competing on American Gladiators, he and the rest of the cast were drug tested after media pressure pushed producers to require it. His result came back positive, despite knowing he wasn't taking anything on any banned list. He demanded a retest; producers refused. He was cleared to keep performing, but barred from autographs and personal appearances for six months, a period he described as devastating to both his income and his reputation.

Determined to find an explanation, Starr sent a dietary supplement he'd been taking to an independent lab for testing. The product came back containing ephedrine, a banned stimulant that appeared nowhere on the label. He eventually received a full apology from the show. The experience, he said, still bothers him today, and it's the reason he has spent the decades since working with schools, athletes, and communities on supplement safety and informed decision-making.

Testing Is Not the Same as Certification

Starr's central message to the audience was blunt: supplements are not pre-approved by the FDA before they hit shelves. A product sitting next to an identical-looking competitor in a store or online can be accurately labelled and contaminant-free, or it can contain undeclared ingredients, banned substances, or heavy metals, with nothing on the packaging to tell the difference.

He drew a sharp distinction between products that claim to be "third-party tested" and those that are independently certified. Testing, he explained, can mean a single one-time check with no ongoing standard behind it. Certification is different: independent experts continuously verify that what's on the label is actually in the product, that manufacturing meets quality standards, and that the product is screened for adulterants, microbes, and heavy metals like lead, mercury, and arsenic.

Inside NSF Certified for Sport

Starr then walked through NSF Certified for Sport, the program he represents. Developed nearly 20 years ago under NSF's mission of "protecting and advancing human health," the certification is built on several layers of verification:

  • Label claim accuracy

  • Good Manufacturing Practice standards at the contract manufacturer level

  • Ongoing, lot-by-lot testing for more than 300 banned substances (NSF is working toward 450)

He noted that NSF doesn't sell supplements (it tests and certifies them) and that the program is trusted by major sports organisations, including Major League Baseball, along with elite and professional athletes across sports who need certainty that what they're taking won't jeopardise their eligibility or their health.

Bringing It Back to Creatine

Turning to creatine specifically, Starr pointed to its research base (more than 1,000 peer-reviewed studies) and cited industry data showing creatine as the fastest-growing supplement category behind protein and hydration, with 44% year-over-year growth. But he was careful to separate the compound from the product:

β€œThe risk is not creatine itself. The risk comes from the product you choose.”

For young athletes whose bodies are still developing, he said, that distinction matters even more. Some products in the category have tested positive for undeclared substances, including pharmaceutical-grade ingredients never listed on the label… precisely the kind of risk certification is designed to catch.

What He Wants Families to Take Away

Starr's closing guidance was simple: look for the NSF Certified for Sport mark on packaging or in online listings before buying any supplement, creatine included. That mark confirms a product has been tested for banned substances, screened for contaminants, and verified against its own label claims.

His parting line summed up the entire session's philosophy as much as his own:
